President-elect Donald Trump’s nomination of Robert F. Kennedy Jr. for Health and Human Services has brought renewed attention to Kennedy’s stance on health matters, including his belief that beef tallow is a healthier cooking fat than seed oils.

On social media, Kennedy recently cited beef tallow as a more natural, nutritious option, especially compared to widely used seed oils like canola and soybean oil.

In an October post, Kennedy suggested that seed oils are a primary contributor to the obesity crisis, tying their rise in popularity to fast food chains like McDonald’s.

The shift from beef tallow to seed oils in the 1990s, he argued, aligns with rising obesity rates in the U.S. But is this claim supported by research? Here’s a breakdown of what experts say.

What is beef tallow? Beef tallow is a type of rendered fat made from the fatty tissue surrounding the organs of cows, often referred to as “suet.”

This fat is cooked down, purified, and strained, creating a stable, semi-solid cooking fat. Tallow can also be produced from the fat of other ruminant animals like buffalo or deer, though beef is the most common source.

Beef tallow has gained popularity in certain dietary circles for its high smoke point and nutritional profile:

In the UK, cuts of beef are fattier than the USA. But the UK also has lower rates of
certain types of cancer, lower rates attributed to the more beef tallow they consume.

A lot of seed oils are treated with derancidification agents. Canola (rapeseed) oil is one of the worst.

And you won’t get a Brit to eat a “chip” that hasn’t been fried in beef tallow. (Pronounced “cheep”).

In the old days, they contained fresh potatoes with a minimum moisture content, sliced fresh, deep fried in beef tallow, and salted.

Today, a toxic waste dump

I don’t like government bans on anything. However, from a health, standpoint seed oils are terrible for health and should be banned. They are basically machine lubricants and should not be in our food.

Those were the good days of McDonalds. Back in the late 1960s to early 1970s, my parents would take us there before going to the drive-in movies, which featured a “kids” movie like “The Love Bug” or “Chitty Chitty Bang Bang” and then an adult movie like “The Exorcist” in which us kids were supposed to put the blankets over us in the back of the station wagon and go to sleep.

Anyway, McDonalds in those days had no such thing as Happy Meals or Chicken McNuggets. We simply had a choice of hamburger (or cheeseburger), fries cooked in beef tallow, and a deep fried apple pie for dessert that always burned our mouths, but we liked them anyway. My mother counted the fries as a vegetable so all was good and it was considered that we had a well balanced meal.

At one point. people thought beef tallow was worse for health. But now?

[Except that McDonald’s does buy their beef from very bad sources, so it isn’t as healthy as it should be.]

Yep. Unless they are cold expeller pressed seed oils, they are best avoided. Some expeller pressed seed oils end up heated well above 100 degrees, and those should be avoided too.

It appears the diet-heart disease connection is not supported by empirical data, including the benchmark Framingham Heart Study. This longitudinal study has been considered a gold standard of research for many years. It found no relationship between saturated fat intake and heart disease.

It doesn’t matter. The Sec of HHS doesn’t rule on science by fiat; he hires people to ensure that the science is correct. All RFKJ could achieve is to have it looked into. If he’s right, he’s right; if he’s wrong, no harm done. All the hysteria about his beliefs are admissions that the system has been corrupt all along, that administrators and bureaucrats make the science say what they want it to say.
